Product Notes

Dalrymple Vineyards, located in the cool-climate region of Tasmania, produces some of the finest wines from the island. The Cave Block Chardonnay showcases the distinctive terroir found in Pipers River, which is renowned for producing top-quality Chardonnay grapes. This wine is pale straw in colour with aromas of melon, white peach and citrus. The palate is rich and creamy with flavours of butterscotch, vanilla and lemon zest perfectly balanced by a bright acidity. The use of oak is subtle, allowing the fruit to take centre stage. This is a wine that will age gracefully and is a perfect match for rich seafood dishes.

Tasting Notes

Delicate aromas of lemon curd and preserved citrus are immediately apparent with hints of roasted cashews and ground ryegrass seed adding some softer depth and complexity. A fine acid palate, that is the hallmark of the Cave Block, provides drive through the palate with mealy texture providing depth and balance to vibrant citrus fruit characters. The finish is clean and long with lingering notes of nectarine skins and roasted kernels.

About the Winery

Dalrymple

Founded in 1987, Dalrymple Vineyards got established by Anne Sundstrup and Bertel Sundstrup. As visionaries, they travelled to France to attain guidance and inspiration in the art of winemaking. The Sundstrup couple planted their first vines on the sloping hills overlooking the Bass Strait that separates the Australian mainland from the island of Tasmania. 

In recent times, Dalrymple Vineyards possess vineyard plantations and estates at Tamar Valley and Pipers River. The areas get blessed by bald and windswept hills, sideways rain, the roaring gales from the northwest, and the primitive gums that lean at an angle. The vineyards coexist with the land and nature, accepting profits while ensuring a mutually beneficial relationship. The plants obtain a natural acidity that provides intense flavours to the berries and roots. Additionally, the optimal levels of sunshine and rainfall that the land experiences promote the growth of the grapevines. 

Dalrymple Vineyards splits the plantings between sauvignon blanc and pinot noir. Their wines are made in Jansz Tasmania. Peter Caldwell became the person in charge of the viticulture, vineyard, and winemaking in ’10. He brought and used his 2 years of experience from Josef Chromy Wines and 10 years’ from Te Kairanage Wines of New Zealand. With his comprehensive knowledge of chardonnay and pinot noir, he raised the status and reputation of the winery to a high level. 

Dalrymple Vineyards combines and incorporates the elements of art, science, and earth. They create an incomparable standard of their products seamlessly. They experiment and explore to produce wines of complex character, texture, flavour, and weight. The winery was established by visionaries, and today, it ismaintained and run by believers.
