About Château d'Ollières
Domain Chateau d’Ollieres is one of the historic wine estates in the AOC Coteaux Varois region of Provence. The wine estate is located between Sainte-Victoire and Sainte-Baume. This was originally founded over a hundred years ago; however, the tradition and history were rediscovered and revived by the Ruoy family in the early 2000s.
When they saw the potential of the Chateau d’ Ollieres in 2003, Hubert Ruoy and his son, Charles, instantly understood the potential of this heritage-rich plot. They set up their vineyards here inspired by the extremely high-wine potential French regions of Bordelais and Burgundy. The rich and balanced wines produced by this group are made from varietals such as Cinsault, Grenache, Vermentino, Syrah, Ugni-Blanc and Cabernet Sauvignon.
At Chateau d’Ollieres, the team gives a lot of importance to the winemaking techniques followed at the cellar. This is to ensure that the flavours of the fruits are not lost at all. The rose’ and white wines of this label are processed through a new technique known as Modern. This was introduced by the Ruoy family in the cellar in 2009. In this technique, almost all of the vinification processes take place in a closed environment, where gases such as carbon dioxide and nitrogen replace the natural air.
The main aim of this innovative technique is to avoid the over-exposure of the grapes to oxygen. When the exposure to oxygen is limited, it helps in minimal oxidisation of the fruit, thereby helping in retention of the aroma. Some of the popular wines created at Chateau d’Ollieres are:
