The grapes are fermented in huge oak barrels that have pores in them. This ensures that the flavour of the grapes stays in them long after the fruits have been removed from them. Therefore, when the same barrel is used for another batch of fermentation, it results in more flavours seeping in from the barrels, to make the wine tastier and richer than you could ever imagine. The wines produced in the Spy Valley winery have a wonderful structure because they are made from highly mature vines.
This winery has many secrets in it, which never ceases to surprise you, irrespective of however many times you visit the place. There is a separate and unique harvesting process followed for every of grape grown here. For example, the Sauvignon Blanc is harvested in the early morning, when the fruits are full of flavour. It is no wonder that this winery has been awarded the New Zealand Wine Producer of the Year award quite a few times.
